This works great as a dip - I really like it with bagel chips (for when I don't want to toast bread (lazy, I know). Obviously it works really well as a traditional bruschetta topping. I like it with a little salt.
The addition of artichoke and mushroom to the tradition mix of tomato, olive oil and herbs make this bruschetta topping really delicious. On top of a crusty bread with just a dusting of sea salt makes a great appetizer.
