The best knives in the world are by Shun. The 7-3/4 Chef's Knife is really a giant Chinese cleaver, which is perfect for butchering chickens into parts, or whacking the roots off bok choy in one fell swoop.

These knives are sublime and make you feel like a real chef as you slice the crust off that PB&J! Knives this good will take care of you for the rest of your life as long as you take care of them: warm water and soap only - never in the dishwaser.

It used to belong to my great-aunt, and had fallen out of use because of a chink in the blade. I sharpened it and it’s as good as new, but has the romantic feel of an old tool.

A long sashimi knife. It's not tapered at the end so it maintains a better edge and you can sharpen at angles a lot easier.
