Chimay Blue
Chimay is probably one of the best known Trappist breweries and deservedly so. Chimay Blue is my fav of all the Chimay beers: rich, creamy, complex. I love that it comes corked, makes beer drinking seem so high-end ;-)

Chimay is made by Trappist monks from the area of yep, you guessed it, Chimay, Belgium. They have several varieties that vary in flavor: from light and full of hops to dark and nutty ales with just the right amount of acidity.
