I just received my Red Velvet Mix kit as a gift and I cannot wait to bake these! I've heard and read nothing but praise and love for these and if they're as delicious as they look I just might have to buy all the mixes! I'm going to try to hold myself back though because I plan on baking these on Valentine's Day for my husband (On top of the goodies I already have planned!) because what could be more perfect than RED velvet! If you're hosting or baking for Valentine's Day I know these would be a hit.

Ok, here it is: the "off-the-top of my head, easy as getting a light in Hell" recipe for when you are in a holiday-cooking time crunch: (Sorry, I only measure when baking. Not cooking. You have to eyeball it.) Aside from baking (or microwaving, if your oven is occupied) the sweet potatoes and reheating the finished dish for a few minutes, this takes all of about five minutes and can be made a day ahead. Mash up cooked sweet potatoes. Add melted butter, a bit of nutmeg, cinnamon, brown sugar (not too sweet- these aren't the main flavors of this version) Pour in a cup or two of eggnog. You're aiming for the sweet potatoes to absorb most of the liquid. That's why we're not calling this soup ; ) Blend it just enough to get out the chunks unless you're going the souffle route. Put it into a serving dish. Crumble oatmeal cookies on top. Ta da. Of course, when I have the time I've prettied this baby up a bit and served it in everything from individual holiday teacups to souffle ramekins. But that's just for when you're going all Martha on it. Sounds simple stupid. And it is. Yet every single time I serve it I have people ask me for the recipe. Probably just because it's a bit different than the usual sweet potatoes and marshmallow combo. But seriously, I've had mini-freakouts from guests. "You put EGGNOG in with SWEET POTATOES?? That's GENIUS!" I always feel like I re-invented the Reese's Peanut Butter Cup or something. Sigh.

But you have to open it to see just HOW cute. Oh. My. God. I've seen a lot of these all-in-one sets and this? By far one of the best ever. First of all, the author's credentials set it apart. Mia Bauer is the lady behind the incredibly successful chain of Crumbs bakeshops- those of you lucky enough to live in L.A., New York or Jersey may be familiar with her delicious creations.... like the FlutterNutter Cupcake- vanilla spongecake with marshmallow buttercream filling, frosted with vanilla buttercream that's mixed with real peanut butter and THEN drizzled with white chocolate and edged with white sprinkles Um... yeah. YUM. So I was so excited to find this kit for kids in a local bookstore. Mia has created an adorable character named Lolly LaCrumb and written a book detailing her many wild adventures. Even better, the book comes complete with wipeable recipe cards that provide easy-to-follow instructions, stencils for decorating (hold the character-inspired designs over your cupcake and sprinkle your topping of choice), kid-friendly measuring tools... oh and so much more. I just can't say enough about it so I'll stop before I try to. Perfect birthday or holiday gift for the little girl in your life- or for yourself. Really, the cover doesn't do it justice. SO much cuter in person!
