The recipes I have for macaroons always suggest things that seem slightly unsanitary (leaving egg whites out for three days!) and while I'm sure that happens all the time in professional kitchens, if I don't see it it doesn't bother me. So when I look at these pretty macaroons in vanilla, chocolate, coffee and strawberry I think yum, not eew.
