They take this hard cider made from late ripening Gravenstein apples when the sugars are high, and then the cider is carefully and slowly converted to vinegar in their 55 gallon oak barrels. The result is a pleasant elixir, redolent of baked apples, honey and sweet spice balanced with a solid backbone of acidity. The Katz Gravenstein Apple Cider Vinegar has many uses in the kitchen.

From these yearly gatherings Katz selects small amounts for their restaurant chef’s who are constantly searching to find an elixir with distinct and bold flavors that stand on their own when paired with a wide range of foods. This year’s bottling includes a batch from the El Dorado Hills near Shingle Springs located at about 1000’ elevation. The color is a light amber and the flavors are of sweet spices and fresh cut hay. It has great mouth feel and calls out to be used where the flavors can be highlighted…on cheese plates, in elegant dressings, drizzled over warm fruit desserts or crisps, spooned over grilled figs with some prosciutto and mint, or served with ice cream and the like.
Katz collects organic marjoram, summer savory, thyme, rosemary and basil at the height of season to create a proprietary blend that adds a bright seasoning to many dishes. Put a pinch on your Mediterranean creations!
