Freddy's Lefse

Lefse is like a Norwegian tortilla -- just swap in potatoes for corn. Just like tortillas, lefse's a little bit different depending upon where you land -- or what part of Norway your American family is originally from. Mine grew up with the large, thin, flat kind -- a lot like what Freddy's makes. My husband's family calls those potato cakes -- and prefers instead their home made lefse, which is a little bit smaller and a little bit thicker -- like the tortilla that you'll find in Guatemala, hand-pressed and cooked on a comal, on the road to Chichicastenago. Either way the drill is the same: spread it with soft butter, sprinkle it with sugar, roll or fold into quarters -- then enjoy. (Freddy's, btw, is the large thin kind. And it's really quite good.)
