This year’s bottling includes a batch from the El Dorado Hills near Shingle Springs located at about 1000’ elevation. The color is a light amber and the flavors are of sweet spices and fresh cut hay. It has great mouth feel and calls out to be used where the flavors can be highlighted…on cheese plates, in elegant dressings, drizzled over warm fruit desserts or crisps, spooned over grilled figs with some prosciutto and mint, or served with ice cream and the like.
