I love baking, but sifting ingredients has always been a pain. That is, until now. Rotary sifter, where have you been all my life? I first tried a rotary sifter in the test kitchen of a magazine where I was competing in a cooking contest. I'd requested "a good sifter" thinking maybe the test kitchen professionals knew something I didn't about sifting. Sure enough, a funny looking sifter with a crank and two "wheels" turned up at my station. Thinking it wouldn't be any better than my usual shake and press-handle sifter, I gave it a whirl and was amazed how the flour went straight through without clumping or flying up. “I love this thing!" I said out loud. A test kitchen staffer heard me and echoed my sentiments, saying she loved the tool as well. When I returned home to Austin, I did some research and found the best price on this type of sifter was Williams Sonoma. You can buy it at the store for $16.00 or order on line and pay shipping costs. Whatever you end up paying, it will be worth it. My cakes are much better now that I'm sifting the dry ingredients and making frosting, a process in which sifting powdered sugar is key, is a breeze. This is a must-have tool.
