There's nothing better than throwing what's left of that roast turkey - the carcass - into a giant stockpot with vegetables and simmering all the flavor out of the bones, skin, and fat into a deep, rich, flavorful broth that you can freeze and use to make amazing soups all through winter. You need a giant stockpot for something as large as a turkey.
