Paprikacha's recommendation
FF7 is probably the most famous Final Fantasy installation to date due to it's engrossing (and pretty bloody deep) storyline, and it's focus on characters, character development, and plot development rather than battling. The story spans 3 discs, and while the graphics aren't amazing, the music and storyline more than make up for them. There are also rumors of Square-Enix possibly updating this game for the PS3.

The one, the beloved Final Fantasy VII.
Perhaps the most memorable RPG ever, hate it or love it, you can't deny it changed RPGs.
A great game with an interesting story and solid characters.
