I'm a fan of copper, but it is difficult to care for, so I do not use them for basic cooking (where I use all-clad stainless instead). However, I have copper pieces that are great for special dishes. For its cooking property because it is the best heat conductor and also distributes heat evenly. Gratin is a dish I do use copper for. Makes everything nice and brown and crispy when I ant it to be. I also enjoy serving my dishes directly from the pan, because they are so beautiful.
