  I first saw these in some speciality shops about 3+ years ago and couldnt resist the unique look and feel. Today, its hard to walk anywhere without being hit on the head with something made from bamboo. Even Towle (the faux-silver people) got into the bamboo game. Reagrdless, bamboo is a great choice. It looks great - the texture is very different from your typical butcher block. Its quite strong and it tends to hide the cut marks. Best of all, bamboo is a renewable and easily sustained resource. Unlike days prior, today you can find dozens of coordinating bamboo accessories for your kitchen and beyond. Two final pieces of advice: the multi-tone bamboo boards are more prone to splitting and you should always use some kind of bees oil / wax to get the most life out of your boards.
