This book is not just about making recipes, it's about applying a mindset and a method employed by one of America's great chefs.

For example, Colicchio teaches you about the importance of pan roasting, something that pro chefs do all the time but home cooks often avoid.

Colicchio does a great job showing how methods and ingredients can work with different dishes. He also keeps things pretty simple and encourages readers to improvise based on their own particular tastes.

Finally, the recipe for duck prosciutto alone makes this book worth the price. It's so simple and the results are spectacular.
