My husband does this but uses blue cheese instead of feta and finely chops all the ingredients and uses garlic and mushrooms inside as well. Tops it with horseradish mustard then the secret rub that he creates!!! This has been our family tradition for the last 6 years !!! IT IS THE BEST!! Everyone wants an invite so we end up buying 2 full rib roasts. he also uses some of the stuffing to layer in between the ribs and the roast and ties it back together.
