Anything from the Cook's Illustrated folks is going to be thorough and lead to great results. Not always the most enjoyable read, but the it is the results that matter.

Worth it for the chocolate chip cookie recipe alone.

Bar-none the best baking book there is around. Every recipe sound delicious and the instructions are meticulous yet easy to understand. Every recipe I've tried from this book has been a winner. It's the first place I go when I start looking for baking recipes.
