Though I am opposed to using anything "nonstick" in the kitchen, the roasting rack is an exception since you really don't want the bird to show up with stripes of its skin ripped off, plus it doesn't have a lot of contact area with the food. The roasting pan itself is stainless steel so any aromatics you toss in the bottom will be fine.
