My grandfather Antonio DiTocco used to have provolone like this 30+ yrs. ago and no visit ended till I got a sample. Don’t put it in the fridge. We Americans still don’t get this—the hard & semi hard cheeses like this provolone keep at room temp wrapped in parchment. It’ll tastes better trust Antonio. Throw this on top of some Parma prosciutto, between fresh Italian bread with xv olive oil & a dash of pepper and you will soon be very happy.
