Yoshikane has been getting lots of love around the knife forums and for good reason. This 6.5" Nikiri, or vegtable knife, is perfect for most of your cooking needs. I use my Nikiri for all vegetable prep work and a Satoku for everythign else. I rarely use my paring and almost never the petty. The hammered finish is beautiful and the HRC 64 rating means a tough steel that can hold a fine edge.
