I pretty much use this for frying eggs only. (Sure, go ahead, laugh at me.) Eggs slide right off this pan, AND I can flip my over-medium like a pancake (pretty cool, huh?). Nonstick is not optimal for cooking most things, in particular sauces, because it does not caramalize the natural sugars in your ingredients. Very important part of cooking.

We like cooking omelets in non-stick pans. Doesn't create that nice burn flavor, but we will give it up for completely burnt omelets. (via Kristine)
