Katz & Co. - Katz All Flower Honey
Each year they gather a number of lots of honey for their Branches Range Wildflower Honey blend. Many of the bees have been strategically placed in distinct areas of the lower elevation California Sierra Foothills to take full advantage of the amazing diversity of flora in bloom during the late spring and summer months. From these yearly gatherings Katz selects small amounts for their restaurant chef’s who are constantly searching to find an elixir with distinct and bold flavors that stand on their own when paired with a wide range of foods. This year’s bottling includes a batch from the El Dorado Hills near Shingle Springs located at about 1000’ elevation. The color is a light amber and the flavors are of sweet spices and fresh cut hay. It has great mouth feel and calls out to be used where the flavors can be highlighted…on cheese plates, in elegant dressings, drizzled over warm fruit desserts or crisps, spooned over grilled figs with some prosciutto and mint, or served with ice cream and the like.
