This book was my bible this past fall when my boyfriend and I did a week of hiking in Great Smoky Mountains National Park. I'm the vegetarian... he is not. However, what impressed me most about this book was that the recipes were delicious and satisfying enough that my meat-eating boyfriend really didn't mind going veg for a week! :) Most of the recipes were easy to prepare in advance, and easy to come together at dinner time... especially after a long day of hiking! Highly recommend!

This looks pretty clutch for any vegetarian planning on camping or backpacking for a while. I searched through the book a little bit and they make it so easy for you to prepare the meals ahead of time (dry) and prepare them fresh at your campsite. Example: for a couscous recipe you put all of the dry ingredients in a big ziploc bag. Then, when camping, boil a cup of water over the fire. Add the dry ingredients, let the water soak in, and voila.

A must-have for any camping vegetarian.
