My absolute favorite of the McVities' cookies- the milk chocolate digestives. Horrible name, that. "Digestives." But the taste? Oh my god, delicious. Here's the trick- dip them in a hot cup of tea juuuust long enough (maybe 2-3 seconds) to get the chocolate a bit melted but NOT long enough to make the cookie soggy or it will fall into the cup. Yep. It's an art form.

Digestives and the pan bread. Two of my most favorite memories of summers in Kerry with grama and gramps. Every blue moon I come across digestives now and can't help but purchase them and eat them all by myself. : )
