I come from a family of amazing cooks who were never ones for measuring out things. Of course they've learned from experience. And although they passed on to me their free form cooking styles, I still think I need to go back to culinary basics. Because frankly, I couldn't eye ball a 1/4 pound of meat or fish if I tried.
