I used to watch my mom and grandmother chop with cleavers, and I've been fascinated with them ever since. There's an art to how you swing these things, and I'm not quite there yet. I think target practice may be the key to success. The Wustolf cleaver is heavy-weight and very durable. There have been many "oops", yet the cleaver is still in very good shape.
