I read about this stuff on Hungry-Girl.com and immediately went out and bought it a container of the Vanilla Unsweetened Almond Milk. This stuff is really good. Here is how I make it:
Take one up of the stuff, heat it up for about a minute
Add a packet of vanilla flavored Splenda
A dollop of fat free cool whip
Top it with a shake of cinnamon and enjoy

I L-O-V-E Unsweetened Vanilla Almond Breeze--have been drinking it now for years, but was really bummed when I learned more about the reports of Carrageenan. I agree with the person above. It is scary--tumor promoter and inflamation inducer, yuck. Blue Diamond, please find an alternative!!!!

Carrageenan, a food additive extracted from red seaweed used in ALMOND BREEZE, is widely used as an emulsifier, stabilizer, or thickener. Previously, it has been shown that carrageenan could play a role in carcinogenesis. However, the mechanism by which it might influence the multimechanism, multistep process of carcinogenesis is not known. Gap-junctional intercellular communication (GJIC) has been associated with maintaining homeostatic regulation of cell proliferation and differentiation. Most cancer cells have dysfunctional GJIC, and many tumor-promoting chemicals, growth factors, and oncogenes can downregulate GJIC. The experiments in this study were designed to test the hypothesis that carrageenan might function as a tumor-promoting chemical by inhibiting GJIC. To test this hypothesis, nontumorigenic rat liver epithelial cells were exposed to carrageenan, and GJIC was measured. Western blot analysis and immunofluorescent staining were used to monitor the phosphorylation and localization of connexin 43. The data revealed inhibition of GJIC by carrageenan similar to that by the well- documented tumor promoter phorbol ester. However, the phosphorylation and localization of connexin 43 were not altered. Although the mechanism by which carrageenan inhibits GJIC is unknown, carrageenan's influence on the carcinogenic process might be via its ability to be a tumor promoter. mmmmmmmmmm good!

Here's a little secret. I have to restrain myself from buying Chocolate Almond Breeze when at the grocery store because I know that I will drink all of it in...24 hours. It's so amazingly delicious that I conciously have to tell myself, "No Emily. You need more in your system than almond milk today."
Aside from that, the original flavor is my favorite. I use it in cereal , smoothies, and drink it just like milk. Almond Milk is also great for camping because it's non perishable until you open it, and even after you have about 2 days to drink it (varies). Delicious. I don't know what I'd do without it.
