I prefer baking cupcakes from scratch and wouldn't dare touch a mix! However, I've used Ina Garten's coconut cupcake recipe on several occasions and garnered rave results. I'm sure her mix will be up to task.
Purchase this mix for the baker running short on time in your life!

The best coconut cupcake I've ever had was at Jones on 3rd. in LA. I know there is Sprinkles and Yummy, but you can't beat the ones at Jones. Since I don't live in LA, and I often crave coconut cupcakes, this cupcake mix from Barefoot Contessa is a delicious substitute.
