Either there's a cheese-loving ghost in my house or we eat WAY more Cowgirl Creamery cheese than either of us cares to admit.

It's a dream on toasted pita with sliced cucumber. (I prefer my pitas sans poches... not that you have to go this way, I'm just sayin'.)

How to describe its flavor... a light, fresh buttery taste with some character due to the white rind. Less creamy, heavy than your average triple-cream brie. More tooth.
