The Microplane is a marvel of technology, function and clever marketing. What makes the Microplane so great? Hundreds of tiny razor blades are created through a chemical etching process. These little razors tend to slice, not rip or shread.

This gadget made it into the kitchen after a short stint in the tool shed. Its original use was to shave wood (microPLANE, get it?).

This thing is amazing. I use it for zesting citrus, grating whole nutmegs and Parmigiano-Reggiano cheese, and it is freakishly easy when trying to get the most out of fresh, peeled ginger -- I can get both ginger flesh and juice when I scrub the pieces across the metal teeth.
