    in a phrase: super-fast, super-hot super-grill. for food geeks: gas superheats a ceramic piece which emits infrared radiation. ir grills heat faster than other grill types (and heats uniformly, due to the ceramic heating element), reach temperatures of 900 degrees f (!), and cook from direct heat to the food's outside, instead of hot air. this combination of high temperature and outside-in cooking allows "sear-grilling", which proponents claim produces extra-juicy meat. it's also effectively self-cleaning (900 degrees will do that). not so good for bbq, though.
