Save yourself thousands of dollars on pastry school classes and buy this book! Sherry Yard will teach you all the secrets, and do so in an upbeat, easy-to-understand yet scientific way. She starts with the basics such as ganache, financier, and various pastry doughs, then teaches you how to build on these basic elements to create fancy desserts from the book and then eventually, fancy desserts from your imagination. It's the kind of book you'll want to settle down with and read, rather than just pull recipes from. A definite must-have for anyone interested in learning pastry basics and then some.
