After simmering all the flavor out of the roasted turkey bones, skin, and fat, you have to strain the stock through a fine sieve to make it clear. An eight-inch diameter is wide enough to place over a very large bowl , and hold hold all the bones you're straining out.

OXO makes great products that are more efficient and arm friendly, I can easily tire out my hands and arms with some tools. A sieve helps with taking the clumps out of flour and other powdery substances.
