Let it be a whole slab of wood, rather than pieced together. This way you can abuse it. Submerge it in soapy water to clean, as a solid piece of wood will not come apart. As for chopping, nothing feels like wood. Marble or glass: never! And acrylic grabs the knife. (via Sur La Table)
