I wholeheartedly approve of people going back to eating animals that are raised in sustainable ways, and I also love that these pigs are not the lean to the point of anorexic. Pigs should be fat!

Heritage Farms finds old breeds of pigs that have been bred out because of their fat content. I use whatever cuts they have available and make menu decisions based on that.
