Description
For me it's about a tie between Cholula and Tapatio. In other words, I wouldn't turn either away. But I more often keep Tapatio in the house.

I just cracked open a bottle of Desert Pepper Trading Company XXX Habanero Pepper Sauce and am happy to add another fine sauce to my collection. The bottle was given to me as a gift so I approached it with caution. If life is like a box of chocolates for Forrest Gump, for the chilihead life is like a new brand of hot sauce, you never know what you're going to get. The Desert Pepper sauce has a nice habanero bite to it but it's not overwhelmingly hot. This sauce is trying to get you to taste the habanero, not kick your butt. It's one of the saltier sauces in my collection which is not necessarily a bad thing if used in small doses. I started with a few drops on some leftover pasta and liked it so much I added more. That's when the saltiness really kicked in. I'd categorize this as a sauce first and a hot sauce second - although any non-chilihead will be running for the ice water Certainly worth keeping around.

Inner Beauty Hot Sauce was my first introduction to the truly over the top hot sauces, my loss of hot sauce virginity, my baptism of fire if you will. Although they claim it's the "hottest sauce in America" which may have been true when I first sampled it, it doesn't pack quite the wallop for me as it once did, but for those just starting to test out their taste buds on hot sauce Inner Beauty is a good place to start. The label says it all - "Sit up straight and stop mumbling". A drop on your tongue of this sauce will certainly capture your attention. Once the heat wears off you'll notice a nice Carribean flavor, whatever that means. I guess they use certain kinds of fruit, curry and spices in the sauce which gives it a distinct flavor. My sister-in-law recently got me a bottle of 95% Pain and I noticed a striking resemblance to Inner Beauty. The label says that you should use it to enhance dull and boring food and I've got to say that I am in total agreement mon.

El Yucateco Green Mexican Hot Sauce is one of those habanero hot sauces that seems like it can only be appreciated by those who truly love hot sauce. It does not have the most heat - El Yucateco Red is more intense, to name but one option for the more masochistic chiliheads. El Yucateco Green Mexican Hot Sauce is comparable to a fine wine. It's complex. It has plenty of heat but also plenty of flavor. It's a perfect complement to all kinds of foods. And the radioactive green color is truly distinctive. Any chilihead who does not count El Yucateco Green Mexican Hot Sauce among their arsenal of sauces on hand is doing themselves a disservice.
