Imagine potatoes and whole garlic cloves sizzing in butter on top, and a blanket of raclette cheese bubbling over air-dried beef in the middle trays. I was very impressed by the dual raclette ovens atop the large tables at Cloud Nine Bistro in Aspen, CO. Such fun communal feasting and delicous results. Someone needs to buy one and throw an apres-ski party soon...

They ship it in by the palette at the French Laundry in Yountville, CA. It's the staple "fizzy or flat" at Barnsley House in the Cotswolds, UK. Lately, I've been seeing Hildon's regal blue label pop up in all the right places.
