Robot Coupe food processor

First to recommend

Description

Yes, I know that the first two items on my list spoke to the old fashioned, manual way of doing things, but our Robot Coupe (a Cuisinart on steroids) is a truly indispensable tool. We use it to make everything from our home-made marzipans to our peanut praline.

Description

We use Straus cream and butter, organic fruits and herbs, and lots of other really great stuff to make our chocolates. The Bay Area has some of the best Farmer’s Markets, making it easy for us to find all of the ingredients for our kitchen.

The business of being a premium chocolatier is so much easier these days, owing in large part to the phenomenal quality of chocolates available. This one is easily available to non-professionals.

Nielsen Massey Vanilla Paste

Description

There is just no substitute for the real thing. Good vanilla beans can be a little (OK, a lot) expensive, but the pure flavor that comes from using the seed from a vanilla bean is just amazing compared to extracts.

Savage Bros. Copper Candy Kettle

Description

There is nothing better for cooking candies than a good thick copper pot. I like the big thick ones from Savage Bros. in Chicago.

It almost doesn’t matter what brand (I like both Global and Wustoff), it just needs to be perfectly sharpened and well cared for.

There are so many ways to mechanically slice and dice, but none of them are as simple and perfect as this classic cutter.
