Description

Brining turkey is a much better way to ensure a juicy turkey than flavor injection or continuous basting. Just use these bags so you don't have to clean out that one container that's large enough to hold your turkey - the garbage can. That's gross.

For some reason, the Stuffing Cage along with that oversized syringe for flavor injection has made Thanksgiving a little bit like the Mad Scientist's. The Stuffing Cage means no more messy scooping of dressing from the turkey cavity. Put the stuffing into the cage, insert the cage into the bird, roast to perfection and pull out the cage.

Philosophically, I am against "injecting" my turkey with anything, hormones, flavors, or otherwise, but if you are so inclined, you may as well get a tool that does more than just one thing. The Dual Baster lets you first inject whatever flavor into your bird, then also serves as a baster during the roasting process.

Description

Though I am opposed to using anything "nonstick" in the kitchen, the roasting rack is an exception since you really don't want the bird to show up with stripes of its skin ripped off, plus it doesn't have a lot of contact area with the food. The roasting pan itself is stainless steel so any aromatics you toss in the bottom will be fine.

Right out of the oven, the turkey's going to be too hot to handle, even after "resting" for 30 minutes. Elizabeth Karmel's silicone turkey lifter goes under the turkey before roasting, and since it's made of silicone, won't melt. When you're ready to sling that turkey out of the roasting pan an onto the carving board, the straps make it easy.
