Choki-Ori Papercraft - Dinosaurs

Description
I had a kit similar to these when I was a kid and I just *loved* them. These are simpler than origami and are a wonderful introduction to paper folding crafts for younger kids (5-8ish). Jungle animals are also available from this shop.

Optical Toys
First to recommend
Description
Optical toys creates flights of fancy and fun from paper. Available on their web site are do-it-yourself paper automaton kits, flipbooks (you may be familiar with their Eadweard Muybridge series), and reproductions of paper toys and books. Their flash-based catalog keeps me from featuring my favorites in more depth (although I may be tracking some down at other retailers); you'll have to visit yourself and find your own treasures.

Description
Kids can practice fine motor skills, learn about other cultures, and be occupied for HOURS with these insanely detailed & free to download paper folding kits. The site is in Japanese, but don't be put off- just click on the link you want and choose the button that has PDF somewhere in it. Just remember that Japan uses A4 size paper so you may have to adjust the print settings a bit.
Suitable for kids 8+ - some parental help may be needed as instructions are in Japanese-- but it's a good way for them to practice problem solving, too! (via YoKiddo)
