Description

Description
Edible flowers are a great way to dress up a salad. For crystallized flowers: Try mixing up 1/3 of an egg white and 1/3 cup sugar. Beat the egg in a bowl, and spread the sugar on a cookie sheet. Line another cookie sheet with plastic wrap. Dip a flower in the egg white, run your finger lightly over both sides to remove most of the white. The petals should be wet but not heavily coated. Lay each flower in the sugar and sprinkle some more sugar on top. Press firmly so the sugar covers the surface totally and adheres.
Transfer the coated flowers to the cookie sheet lined with plastic, and set them aside to dry at room temperature. When the sugar has dried and crystallized, store the flowers at room temperature in a container with a tight lid. They'll keep for up to a week.
