Pumpkin Cheesecake Pan

because using it twice is nice - for halloween and thanksgiving, impress all of those coworkers and family members of your fabulous baking skills.

and a fun little cheesecake recipe - for these, add a little orange food coloring to make things festive! top with chocolate chips or blackberries!

Mini Cheesecakes

12-oz. pkg. vanilla wafers
two 8-oz. pkgs. cream cheese
3/4 cup sugar
2 eggs
1 1/2 tsp. vanilla extract


Preheat oven to 350 degrees. Lightly grease bottoms and sides of each tin.

Crush the vanilla wafers finely and distribute them evenly among each of the 12 tins. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each tin with mixture, almost to the top. Bake 15 minutes.
