"I've been on the Oprah 21 day cleanse thing and one of the things I miss the most is real flour. Soy flour by itself is find of gross, rice four alone is kind of soft, but this mix can be substituted one of one for wheat flour. With a mix of tapioca, fava, and garbanzo flours along with some starches it takes all the guesswork out of mixing gluten free flours to get something tasting good."
